GENERAL CHARACTERISTICS OF THE WINES

YOUNG WHITE WINES
Made from the native variety zalema, they are characterized by their slightly vegetal nuances, with hints of scrubland; they are pleasant and easy to drink.
PALE COUNTY
They are quite similar to other Andalusian finos (Jerezanos and Montillanos). Palomino grapes are used in their production, the same used in Jerez, although they have a somewhat weaker biological character.
OLD COUNTY
These are the most traditional wines of the area, which are only kept in a few wineries and come from the oldest soleras.
