SITUATION

South of Córdoba. It includes all the vineyards of the municipalities of Montilla, Moriles, Montalbán, Puente Genil, Monturque, Nueva Carteya and Doña Mencía; and part of those of Montemayor, Fernán-Núñez, La Rambla, Santaella, Aguilar de la Frontera, Lucena, Cabra, Baena, Castro del Río and Espejo.

SUBZONES

A distinction must be made between the vineyards in the flatter areas and those in the higher zones (Sierra de Montilla and Moriles Alto). The latter, settled on calcareous soils, are the highest quality of the DO and account for just over 2,000 hectares.

CLIMATE

Semi-continental Mediterranean, with warm, long, dry summers and short winters. The average annual temperature is 16.8°C and the rainfall is between 500 and 1,000 mm.

SOILS

The vineyard is located at altitudes ranging from 125 to 640 meters above sea level. The soils are loamy, sandy loam and, in the higher areas, of calcareous type ("albarizas") which are, precisely, those of the highest quality, and the majority in the so-called Superior Sub-zone, which includes the municipalities of Montilla, Moriles, Castro del Río, Cabra and Aguilar de la Frontera.

VARIETIES

White: pedro ximénez (main variety), airén, baladí, moscatel, torrontés, chardonnay, sauvignon blanc, macabeo and verdejo.
Reds: Tempranillo, Syrah and Cabernet Sauvignon.

GENERAL CHARACTERISTICS OF THE WINES

YOUNG WHITE WINES 
They are light and fruity wines for quick consumption.
 
FINOS 
Produced by the classic procedure of biological aging under the "velo en flor" (veil in bloom). With saline, yeasty and bitter almond aromas, they differ from sherries in that they are somewhat less dry in the mouth.
 
OLOROSOSOS 
Mahogany color, with aromas of pastry; sweet and tasty in the mouth.
 
AMMONTHY 
Amber or old gold color. Aromas of dried fruits (almonds and hazelnuts); in the mouth with sweet notes and certain traits of biological aging due to its biological origin.
 
PEDRO XIMENEZ 
This is the quintessential wine of Montilla - Moriles. Made from sun-dried grapes. Its color can range from mahogany tones, to very dark browns, completely dense and concentrated. Unmistakable for its aromas of raisins, dates and roasted; in the mouth it is sweet, doughy and tasty.
