CLIMATE AND SOILS

The hallmark of Salta is its white wines made from the torrontés riojano variety, grown mainly in sandy-loam soils. In this area the temperature differential reaches a contrast between day and night of more than 30 degrees, so that the grapes tend to dehydrate quickly, going from vegetal to candied flavors in the blink of an eye, but maintaining a very high acidity, which in the mouth translates into pleasant acidulous sensations. The sun in Salta is sharp and scorching due to the greater intensity of the ultra-violet rays and as a consequence of its high altitude. This influence has led Salta's wineries to look for specific slopes to minimize its effect. Their wines, whether red Malbec, Cabernet Sauvignon or white, easily exceed 16º of alcoholic volume.

PRODUCTION AREAS

Salta's vineyards are distributed among the departments of Cafayate, San Carlos, Cachi, Molinos and La Viña.
