Roast turkey with vegetables

Ingredients
- 500 g turkey breasts
- 1 red pepper
- 1 green pepper
- 1 large onion
- 3 carrots
- 2 cloves of garlic
- 1 glass of water
- 1/2 glass of white wine
- Salt and black pepper
- Extra virgin olive oil
Preparation
- Chop the garlic and cut the rest of the vegetables into julienne strips except for the carrot, which should be cut into slices.
- Season the turkey breasts with salt and pepper and sear them in a frying pan with olive oil over a high heat.
- Sauté the onion and garlic and after 10 minutes add the peppers.
- Cook the carrot with the glass of water until soft. Strain and reserve the water for later.
- Mix the carrot with the rest of the vegetables.
- Place a layer of vegetables and the turkey breasts on top in an ovenproof dish. Place some more vegetables on top and pour in the carrot cooking water and ½ glass of white wine.
- Bake in a preheated oven at 200 degrees for about 15-18 minutes (check the doneness of the turkey).
